Who doesn’t love sandwiches? I’m not talking about the plain old turkey on rye or ham and cheese. I am talking about absolutely delicious, nutritious works of art. These sandwiches not only look great, are easy to make, but also have a fantastic taste. Check out this list for 8 of the best easy healthy veggie sandwiches you can be having today!

Caprese Sandwich – slice some juicy, sweet tomatoes, add some fresh basil, and creamy mozzarella cheese. Layer them between slices of freshly baked focaccia, ciabatta, or a French baguette. Drizzle some extra virgin olive oil – and you have yourself a meal! You can leave the bread as is, or toast it for an extra crunch.
